* 50g (2oz) butter
* 1.5 kg (3 pounds unpeeled 5oz) new potatoes, halved if large
* 200g pack merchant gourmet chestnuts (in most supermarkets)
* 2 sprigs fresh rosemary
1st Melt the butter in a large, heavy saucepan. It is important to go for something with a very tight-fitting lid. Add the potatoes, lots of salt and black pepper to stir to coat.
2nd Cover and let stand 1 hour or longer if you have time, until the skin is colored shake well that heat now and then. Add the chestnuts to give the last 30 minutes, and a few sprigs of rosemary at the end of a hint of flavor.
