Ingredients

* 425g (15 ounces) ready-rolled puff pastry
    * 240g (½ oz red) onion marmalade
    * 200g (7 oz soft), mild goat cheese
    * 24 cherry tomatoes, quartered
    * Handful of fresh thyme
    * 100g (3 ½ oz) rocket leaves

Method

   1st Roll out the puff pastry and cut it into eight squares. Put a layer of baking paper on a baking sheet and places the dough on top. In the oven at 190 ° C (375 ° F, gas mark 5) for 8-10 minutes.
   2nd Remove from the oven and spread each square with 1 tablespoon onion marmalade, so that a flat frame around the edge. Crumble the goat cheese and add 3 quartered cherry tomatoes to each piece. Sprinkle with thyme and lots of freshly ground black pepper.
   3rd Return to the oven and bake for 10 minutes, or until the dough is golden and the cheese is brown top.
   4th Serve two slices per person, hot or cold, with the rocket.
