Ingredients

* 1 tablespoon olive oil
    * 1 ½ red bell pepper, cut into pieces
    * 1 ½ yellow pepper, cut into pieces
    * 200g pack feta cheese, diced
    * 4 eggs, beaten
    * 4tbsp double cream
    1 tablespoon chopped fresh chives *
    * 2 tablespoons chopped fresh parsley

Method

   1st Heat the oil in a large non-stick pan, add the paprika and cook over medium heat for 15 minutes until soft and lightly colored. Scatter the feta.
   2nd Combine the eggs, cream and herbs, then season strong. Pour over the pepper mixture, reduce heat, and cook for 15-20 minutes until just set. Cook top under a preheated grill for 5 minutes, golden, until even. Cut into thick wedges and serve.
