
Ingredients
* 225g (8oz) self-raising flour
* A pinch of salt
* 1 pinch cayenne pepper
* 1 teaspoon baking powder
* 50g (2oz) butter, cut into cubes
* 50g (2oz) Cheddar cheese, grated
* 75ml (3 fl oz) milk
Method
1st Sift together the flour, salt, cayenne and baking powder. Using your fingers, rub the butter into the flour mixture (or do this in a food processor).
2nd Mix with the grated cheese. Add the milk a little at a time (you may need all of it) and mix with a flat blade knife until the dough begins to come together.
3rd Once you have formed a smooth dough, press it into a ball with your fingers. Pat or roll out until it in about 1.5-2cm (¾) thick. Cut into rounds with a 7-8cm (2 ½ in) cutter.
4th Order type on a baking sheet in oven for 10-15 minutes at 200 degrees (400 ° F, gas mark 6) until risen and golden.
