* 25g (1oz) butter
* 1 tablespoon olive oil
* 2 spring onions, sliced
* 2 cloves garlic, crushed
* 1 stalk celery, finely chopped
4 * large flat mushrooms
* 1 x 250g pack of mushroom rice
* 1 tablespoon chopped fresh parsley
* 25g (1oz) cheddar cheese, grated
1st Melt the butter and half the olive oil in a frying pan and fry the spring onions, garlic and celery for 2-3 minutes.
2nd Cut Chop the stem for the center of the mushrooms and add to the pan. Cook for 1-2 minutes then spoon into a bowl.
3rd Heat the rice according to pack instructions, then add to the bowl with the freshly chopped parsley and good.
4th The remaining oil in the pan and place the mushrooms, skin side down in the pan. Spoon the rice mixture into each mushroom and cook for 4-5 minutes over low heat.
5th golden brown Sprinkle each mushroom with the grated cheese and place under a preheated grill for 2-3 minutes, and bubbles.
