* 1 clove garlic, crushed
* 18 black olives pitted quite
* 100ml (3floz) olive oil
* 400g (14oz) halloumi cheese
* 3 large tomatoes
* 6 new potatoes cooked only
* 2 large zucchini
* 1 red onion
* 1 eggplant
* 6-kebab skewers
* Pitta bread to serve
1st Mix together the garlic, olives and olive oil to the marinade.
2nd Cut the cheese into 2.5cm (1 inch) cubes.
3rd Cut the tomatoes into four and remove the seeds. Cut potatoes in half length-ways.
4th Chop the remaining vegetables into 2.5cm (1 inch) cubes on skewers and with the potatoes and tomatoes.
5th Marinate the kebabs for 2 hours.
6th Cook on barbecue or grill until they are tender, turning after 2 minutes on each side, and serve in pita bread or on a bed of lettuce.
