* 2 tablespoons olive oil
* 2 onions, peeled, quartered and thinly sliced
* 2 cloves garlic, peeled and chopped
* 3 zucchini, cut into 5mm slices
* Ground black pepper
300g ripe plum tomatoes * cut into slices 5mm
* 3 stems tarragon, leaves stripped and roughly chopped
* 50g breadcrumbs
* 110 g half-fat hard cheese, finely grated
1st Heat the oven to 200 º C/400F/gas 6th Warm 1 tablespoon olive oil in a large frying pan and the onion and garlic and 2 tablespoons water and cook, stirring 5 minutes or until soft.
2nd Remove the onions in an ovenproof dish or baking dish and spread them evenly over the floor. Season with pepper.
3rd Warm the remaining oil in same pan, raise the heat to medium high and add the zucchini. Cook, stirring occasionally, until they begin to color lasts, the min fifth
4th Tip the cooked zucchini from the pan, so as to cover the onions and garlic in the bowl and sprinkle the zucchini with the tarragon leaves and then tuck in the tomato slices randomly between the zucchini.
5th Mix the bread crumbs and grated half-fat hard cheese and sprinkle over the vegetables.
6th Cover with foil and bake 20 minutes.
7th Remove the foil and continue to brown the top bake for another 10 minutes. Serve immediately or let cool, refrigerate and then warm, if you need.
