* 2 eggplants
* 3 zucchini
* 2 tablespoons olive oil
* 2 x 125g packs Asda Mozzarella
* Asda 340g glass tomato-garlic sauce
* 6 basil leaves, chopped
* 50g mature Cheddar cheese, grated
* Herb salad to serve
1st Preheat grill and oven to 190C / 170C fan / gas-5. Cut off ends of eggplant and zucchini. Cut eggplant into 1 cm slices and each lengthwise in 3 slices of zucchini. Brush vegetables with oil and grill until soft.
2nd Slice mozzarella and heat sauce. Spread a little sauce in the base an ovenproof dish and sprinkle with half followed the vegetables through a layer of mozzarella and basil. Repeat to use all on.
3rd Sprinkle the Cheddar cheese on and bake for about 30 minutes. Serve with herb salad.
